Cristóbal organic wines are crafted with distinct, authentic and natural characteristics. They are produced using rigorous winemaking methods aimed at preserving freshness, structure, balance and our identity.
I t has an intense red color, with market violet tones. Aromatically explosive, where aromas of plum, blackberry and cherry are evident, accompanied by floral notes such as violet. On the palate it presents a sweet entrance, balanced acidity and hints of red fruits that provide a long and pleasant finish.
Vinification
5 months in stainless steel tanks.
Cold pre-fermentation maceration for 3 days. Subsequent alcoholic fermentation, at a controlled temperatures between 25ºC and 28ºC with selected yeasts authorized for organic production. Daily pump-overs complemented with delestage during fermentation to facilitate the extraction of aromatic compounds and color. Post-fermentation maceration for 3 days.
